Cacao Project in Bali (Indonesia)

This project aims to connect
Indonesia and Japan through cacao,
rebuilding relationships between farmers and consumers.
In Indonesia, many cacao farmers are facing
difficult circumstances due to economic decline,
with some being forced to give up their farms.

To address these challenges,
we are working towards SDG goals through local job creation,
infrastructure development, and waste reduction
initiatives such as using lower-grade cacao
as raw material for incense and chalk.

To Japan, we deliver cacao products not as aid,
but as high-quality merchandise.

Chocolatier

After serving as the bar manager and general manager
at the long-established Ristorante Bellini in Ashiya, he became independent in 2013.

Opened cherry.c in 2013
and Le chocolat in 2020 within Ashiya City.

Combining the expertise of a bartender with the artistry of a chocolatier,
he has created a new art form – Cocktail Chocolate – unlike anything else.

1998 Appointed as manager of a Piano BAR in an Osaka hotel
2002 Transferred to the beverage team responsible for drink menus at major restaurant groups nationwide; in the same year, moved to the new store development department and was involved in launching over 20 stores across the country
2006 Appointed as BAR launch manager at the established Ristorante Bellini in Ashiya; began chocolate training with the in-house patissier
2010 Served as both bar manager and general manager at the established Ristorante Bellini in Ashiya

2017 Incorporated as Cerisier Corporation (to expand corporate business)

May 2024 Began operation of cacao farm cherry.c Farm in Tabanan, Bali (in-house cacao production)
  Renovation has begun on a leased factory in Bali under the name cherry.c Factory, aiming for completion in early 2025. The facility will enable in-house production from cacao to chocolate.

From 2025 Around 2026

Construction has started on a new store named sakura chocolate, located within the Del Mare resort in Bali, with plans to open around 2025–2026. The shop will offer shaved ice and drinks made with chocolate.

A new specialty shop, cherry.c -Bali-, focusing on fresh chocolate, is scheduled to open in Kuta, Bali.

Additionally, business negotiations are ongoing for expansion into hotels and airport locations in Jakarta, Indonesia.
